Broccoli Casserole
- 2 (10-ounce) packages frozen chopped broccoli, cooked and drained
- 1 cup mayonnaise
- 1 cup grated sharp cheddar
- 1 (10 3/4-ounce) can condensed cream of mushroom soup
- 2 eggs, lightly beaten
- 2 cups crushed crackers (I use ritz or club crackers)
- 2 tablespoons butter, melted
mix everything except the crackers and butter together. Pour mixed ingredients into a greased casserole dish. Sprinkle crackers over top of casserole and pour butter over top. Bake for 35 mins or until the tops of the crackers are golden brown.
Another favorite of mine is Squash Casserole
- 6 cups large diced yellow squash add some zuchinni too! It's just as good.
- Vegetable oil
- 1 large onion chopped
- 4 tablespoons butter
- 1/2 cup sour cream
- 1 teaspoon House seasoning, recipe follows
- 1 cup grated cheddar cheese
- 1 cup crushed butter crackers (again I use Ritz)
Preheat oven to 350 degrees F.
Saute the squash and onions in a little vegetable oil about 15 to 20 minutes. When your squash is done you need to drain them and get all the excess juices off of them
After draining the squash mix all ingredients together except cracker crumbs. Pour into a casserole dish and top with cracker crumbs. Bake for 25 to 30 minutes
