I found this recipe at http://www.hollyfurtick.com/. And wanted to try it out. I absolutely recommend it, it was so easy to make and so delicious.
2-3 chicken breasts (frozen is fine)
1 can of corn (drained)
1 can of black beans (drained and rinsed)
1 can of rotel tomatoes (drain half the juice off)
1 pkt of taco seasoning
Put all your ingredients in the crock pot and 6-7 hrs later you have an amazing meal. Sometime before you serve shred your chicken breasts. I did mine with 2 forks....the chicken is really tender so it works really well.
We turned ours into chicken nachos instead of taco's that part is up to you and whatever your family prefers. Then add lettuce, tomatoes, onions, cheese, sour cream, salsa, etc. To top mine off I also bought a block of the cheese queso (I found it wear the sell sour cream, cream cheese, cottage cheese section at the grocery store) and melted it.
My kids loved it and Allen said it is now in his "top 5" of the things I cook.
