Fruit Cobbler


When it comes to fruit cobbler I am annoyingly picky.  I have a mental check list of everything I need to make a kickin cobbler.  I'm a big ole pain in the butt about it. 

I typically won't make a cobbler unless I have all the right ingredients.  Sub-par cooking/baking really isn't my style.  I am WAYYYY to much of a people pleaser for that to happen. 

Must haves for a good cobbler (according to me).
1.  Fresh Fruit (or frozen fruit...NEVER canned)
2.  Real Butter
3.  Whole milk
4.  Rum (feel free to condemn)
5.  Vanilla Bean Ice Cream

I have found a WONDERFUL cobbler recipe that I stick too.  I use different fruits depending on who I'm making it for.  Thus far I've used peaches (fresh), cherries (frozen), strawberries (fresh), and a combination of peach and pineapple (both fresh). 

I'm trying out a vanilla custard ice cream recipe later tonight...I'll share that with you soon!

This cobbler comes out perfect everytime.  Delish!!   It makes a treat everytime!  At the bottom I'll include some additional ingredients that are optional.

Crust
-1 1/2 cups self rising flour
-1 cup sugar
-1 1/2 cups milk
- 1 stick butter

Fruit
-4 cups fruit
-1 cup sugar
-1/2 to 1 cup rum

Directions

-Preheat oven to 350 degrees.

-Combine the fruit, 1 cup sugar, and rum in a saucepan and mix well. Bring to a boil and simmer for 10 minutes. Remove from the heat.

-Put the butter in a 3-quart baking dish and place in oven to melt.

-Mix remaining 1 cup sugar, flour, and milk slowly to prevent clumping.

- Pour mixture over melted butter. Do not stir.

-Spoon fruit on top, gently pouring in syrup.

- Batter will rise to top during baking. Bake for 30 to 45 minutes.

To serve, scoop onto a plate and serve with your choice of whipped cream or vanilla ice cream.

No rum?  You can always substitute water. 

A slight sprinkling of cinnamon tastes wonderful when using peaches.

1tsp of vanilla added to your cherries after you bring them to a boil is a GREAT idea.
