Christmas morning we had Allen's mom and dad over so they could watch our extremely animated children open their gifts from Santa. I wanted to fix an awesome breakfast for them so I thought I'd try my hand at a breakfast casserole. I made this Christmas Eve night but didn't bake it until Christmas morning. It was a huge hit! Everyone enjoyed it and I can't wait to make it again.
The glory of casseroles in my casserole loving opinion is you can custom fit them for your family. Add things you like, subtract things you don't like. Hey! It's like math only cooler!
Here is the recipe I used. You should try it! Make it the night before and all you have to do the next morning is stick it in the oven. Your family will love you and think you slaved for hours upon hours, then milk it for all its worth!
"Sorry I can't do laundry today I slaved over your amazing breakfast this morning"
"Honey, can you clean the bathrooms? I'm exhausted from making you that breakfast casserole this morning"
Those are a few examples...not that I've ever used them or anything ;)
Here you go!
Ingredients
- 1 pound sliced bacon, diced
- 1 medium sweet onion, chopped
- 6 eggs, lightly beaten
- 4 cups frozen shredded hash brown potatoes, thawed
- 2 cups shredded Cheddar cheese
- 1 1/2 cups small curd cottage cheese
- 1 1/4 cups shredded Swiss cheese
Directions
- In a large skillet, cook bacon and onion until bacon is crisp; drain. In a bowl, combine the remaining ingredients; stir in bacon mixture. Transfer to a greased 13-in. x 9-in. x 2-in. baking dish.
- Bake, uncovered, at 350 degrees F for 35-40 minutes or until set and bubbly. Let stand for 10 minutes before cutting.
I made one casserole with bacon, and another with sausage so either one works. I also added green onions and peppers. I noticed it was really really thick only using 6 eggs so I added 2 more (total of 8 eggs. yay math!).
I sprayed the heck out of my baking dishes put the raw mixture in and refrigerated overnight.
Then right before I baked them I sprinkled cheese on top so it would brown and look nice.
Try this out you will NOT be disappointed.
