Here is a recipe that is quick and easy, doesn't require a lot of ingredients, and is super tasty!
Pepper Steak
1-2 lbs top sirloin ( I cheat and buy whatever is on sale)
1 onion
2 bell peppers (green bell pepper is the cheapest but I find it looks pretty if you use a green bell and either a yellow, orange or red bell)
1/2 teaspoon of minced garlic
1 can of beef broth (14.5 oz)
1/4 cup of soy sauce
3 tablespoons of cornstarch
1/3 cup of water
Cut steak in strips, as well as onions, and bell pepper.
Combine onions, peppers and garlic in pan and cook for approx 5 minutes.
Add Steak into your onion and pepper mixture. Cook for another 5 minutes.
Then add broth and soy sauce and cook another 10 minutes.
Mix cornstarch and water in separate bowl, then add to mixture to thicken.
Let pepper steak simmer on low for another 5 minutes.
Serve over rice.
All my kids love this, as well as Allen and myself. Its perfect on a gloomy day. Whats great is you can change the recipe to fit your family. If you don't enjoy onions and peppers substitute for broccoli. Or if your family prefers chicken use that instead of steak. And if your taste buds like variety add water chestnuts and mushrooms. It only takes about 30 minutes to make and you won't regret it!
